Egg bites

Muffin tin or silicon baking cups
1 egg less than the number of cups
1 bunch of cilantro chopped, stems and all 
Pinch of Himalayan salt 
2 roasted whole pasilla peppers choose your own adventure with the seeds, chopped 
1 handful of your preferred shredded cheese (2 if you don't work a desk job) 
2 corn tortillas chopped into tiny bits, skip if you think carbs are bad

Beat the eggs, add the rest, spoon into lightly oiled muffin cups, bake at 350° and try not to over bake like in the photo above. 

Grab and go breakfast, good even cold.
